Summer Road Trippin’: Honey Sriracha Roasted Chickpeas

Our household is a few camping and mini-road trips into the summer weekend adventure season!  We have had some super fun ones and even more that I can hardly wait for!  So car snacks are absolutely a happening thing for this easily hangry traveler.  Hangry Maria is not someone you want as a travel buddy.  Just ask the husband. I had been dying to test out a bunch of roasted chickpea flavor ideas I’ve had floating around in my head.  So before our weekend trip a couple weeks ago, I made a small batch of each.  The two clear favorites were the honey sriracha version in this post and the…

Father’s Day and Hashbrowns

I was probably 16 or 17 before we ever actually celebrated father’s day.  Not because I didn’t have a father.  I do!  A great one! He wasn’t absent in mid-June each year by coincidence.  Every summer is the commercial salmon fishing season in Alaska.  So, it was just the nature of his industry.  His dad was in the seafood world, and his brother is too.  My dad would leave in mid-May for southeast Alaska and we all would follow as soon as school let out at the end of June.  We would return at the end of August and my dad would come home in Mid-september.  As a young kid,…

In full disclosure, I don’t throw around terms like “the best” and “ultimate” lightly.  No, sir.  I treat those labels with the respect they deserve.  But, these are the “your search for the best black bean burger ends here” kind of thing. Also, if you have not tried black bean burgers/sliders.  Once you try them, you will realize how much you were missing out on – regardless…

Southwestern Chipotle Sweet Potato Noodle Salad

If the 80s there were acid wash jeans, leg warmers, and shoulder pads.  The 90s had hair crimpers, frosted tips, and breadmakers.  And today, we have……the spiralizer. Well, who knows what we will look back on and say “What were we thinking about?,” but I am betting that spiralized vegetable noodles and the spiralizers that create them will at least be on the list as diets become increasingly health conscience.  My attitude with friends as with vegetables is the same:  “The more the merrier.”  Its certainly not a bad thing, so I am not ready to lump them in the same category as hammer pants and boy bands. And also,…
