Grown-up Twix Bars

If there was one halloween candy that I could remake into something just a bit more elevated it would be a Twix bar.  Don’t get me wrong, the original version had my whole Halloween candy loving heart as a kid… but now, something about it falls a bit flat.  Probably the waxy, too-sweet chocolate. Or the not-as-good-as-I-remember it cookie.  Or maybe its the caramel – a little pinch of sea-salt would go a long way! The result is by far one of my favorite things I have made in a long time.  Possibly my favorite recipe of the YEAR so far!  Which is saying something because there are a number…

Healthy Treats – Salted Caramel Chocolate Coconut and Oat Bars

If you cringe when asked to be “treat mom” or to “bring the treats,” I know the feeling, even though I am currently kidless.  Almost everyone if off of something these days. Even kids! The school’s list of acceptable/unacceptable ingredients in homemade treats I see pinned to the fridge at my friends’ house leaves little but organic unicorn dust and non-GMO rainbows up for grabs.  And unfortunately, I’m fresh out of both. The fourth of July is about warm weather and fun.  It is definitely not about fussing over food.  So, when I posted my absolute favorite chewy peanut butter cookie recipe earlier this week and hinted at a follow up recipe later in the week, here they are folks those same soft and chewy peanut butter cookies with a big scoop of salted caramel gelato in the middle.  Voila! Cookies to snack on AND a festive summery dessert! 5 minutes of prep folks.  5 minutes.  Plus, you can make these little guys hours or even a day ahead of time! You can use any ice-cream or gelato you like, but have…

Summer Road Trippin’: Nutty Caramel Corn Clusters

I believe we are officially in the presence of Summer weather.  Its getting to be that warm weather time of year!!!  After the PNW’s exceptionally wet, dark, and dreary winter and spring, I have never been more excited for summer weather.   Memorial day has passed.  Schools are letting out for summer.  Could we be on the cusp of SUMMER ROAD TRIP SEASON?! So while my parents gave me an awesome childhood full of Alaskan summer adventures, beach trips, and lots of tromping around the woods, I hadn’t ever been on a proper multi-location road trip.  My road trip experience is still somewhat limited compared to those of you who…
