You guys, its stone fruit season, which means PEACHES, PEACHES, and more PEACHES!  This salad takes advantage of all of the summer flavors: fresh cilantro and lemon juice, spicy peppers, creamy avocados, sweet peaches, and crunchy cucumbers! I know that I have said this before but summer is not the time of year when I want my oven cranked up… Aside from the heat factor, its also the TIME!  So, I have been falling back in love with one of my old faithful cheats:  ROTISSERIE CHICKEN!
