Stuffed Acorn Squash

When I was a kid, my favorite Thanksgiving food was stuffing! My family makes a sage stuffing recipe. I thought it was heaven on earth.   Probably because I had no idea other types of stuffing existed! When I discovered the wonders of oyster stuffing and sausage-apple stuffing, my eyes were opened to the world of options! My mom and extended family really like their staples. They rarely venture far from them. They make this stuffing with bread that I can only describe as the most basic white sandwich bread you can buy. Friends, what happens to basic white sandwich bread when it gets even a tiny bit wet? It turns…

Back-to-School: Coconut Milk Poached Cod with Bell Peppers and Pineapple

This back-to-school season, I will be posting new One-Bowl-Wonders recipes.  Recipes in this series are simple, quick, and can be made with just one bowl.  They are designed to be ready to eat in under an hour without wrecking your whole kitchen!  Easy recipes. Easy clean-up. Big reward! ….Perfect for back to school! In August, the husband and I stole away for a little over a week in Kauai. It was equal parts invigorating, relaxing, and exactly what we needed before launching into a crazy season that will involve a move (never fun) and lots of changes (all, good and necessary). Kauai and Hawaii, in general, may not be known as…

Love People Well: Spicy Asian Quick Pickled Veggies or “Quickles”

No one can argue with the easily shareable/giftable nature of cookies, muffins, scones, etc. but does my single-dude contractor friend who saved our house from falling over this week want a batch of muffins?  I’m willing to wager that answer is “no.”  (Although, he’s never been one to turn down anything with chocolate chips, now that I…

Summer Sides and Salads: Chimichurri Peach and Avocado Salad

You guys, its stone fruit season, which means PEACHES, PEACHES, and more PEACHES!  This salad takes advantage of all of the summer flavors: fresh cilantro and lemon juice, spicy peppers, creamy avocados, sweet peaches, and crunchy cucumbers! If you have had the oregano heavy chimichurri with meat (usually steak), this is its fresher lighter cousin. I’m opting for cilantro instead of oregano, tons of spices, and a little heat from a serrano pepper!  I can’t even explain the magical burst of summer this sauce and salad evoke on my tastebuds.  Can’t even. I will be very sad to see stone fruit season come to and end.  And nine out of…
