Love People Well: Spicy Asian Quick Pickled Veggies or “Quickles”

While I admit that I gravitate towards baked goods, specifically muffins, as evidenced by the first two posts in the Love People Well series (found: here and here), I am spreading my wings and branching out!  Pull your mason jars!  We are making “quickles!!”  The easiest, tastiest, crunchiest spicy Asian-style quick pickled veggies! Mango Avocado Salsa

On a spiciness scale of plain yogurt to ghost peppers, my preference lands somewhere just above plain yogurt.  While every other kid was busy dumping ketchup on everything in sight, I thought ketchup was too spicy.  Instead, I stuck to my Nonna’s homemade bleu cheese dip.  I was a weird foodie kid from the get go.
