Summer Salads and Sides: Mediterranean Chickpea Salad

I wish I had the olive toned complexion of a Greek or the shiny dark hair of the Lebanese. But mostly, I just wish I could eat and cook Mediterranean food every day of my life.  (Maybe with a sprinkling of sushi and Thai food every once in a while, just to mix it up.)  But in general, Mediterranean food is my absolute favorite!  The flavors and colors make my stomach growl and my eyes grow wide. Ya’ll, I eat far less meat these days than I have in the past, and there are some sad-sad vegetarian options and alternatives out there.  In my opinion, Mediterranean cuisine has the best…

Summer Road Trippin’: Oven Dried Strawberry Trail Mix

Did everyone have a wonderful 4th of July???  I hope so!  We rolled it all into a 4 day weekend and went out to our fam’s cabin.  Was great to relax but if anyone lives in Eastern Washington or northern Idaho… How are you all surviving the pollen in the air right now???  I wouldn’t describe any of us as being allergy prone and yet, we all felt like we were in foggy-headed allergy comas! I do.  It’s this Green…

Mango Avocado Salsa

On a spiciness scale of plain yogurt to ghost peppers, my preference lands somewhere just above plain yogurt.  While every other kid was busy dumping ketchup on everything in sight, I thought ketchup was too spicy.  Instead, I stuck to my Nonna’s homemade bleu cheese dip.  I was a weird foodie kid from the get go. My husband keeps waiting for more of my tastebuds to die so that we can finally add an additional star to our Thai food order.  “Just wait until you get older,” he says.  So far, no such luck.  Sorry.  But Salsa…I love salsa.  Maybe just not spicy salsa. So this Mango Avocado Salsa, may…
