Love People Well: Spicy Asian Quick Pickled Veggies or “Quickles”

While I admit that I gravitate towards baked goods, specifically muffins, as evidenced by the first two posts in the Love People Well series (found: here and here), I am spreading my wings and branching out!  Pull your mason jars!  We are making “quickles!!”  The easiest, tastiest, crunchiest spicy Asian-style quick pickled veggies! Summer Sides and Salads: Garlic and Ginger Chicken Udon Noodle Salad

I know that I have said this before but summer is not the time of year when I want my oven cranked up… Aside from the heat factor, its also the TIME!  So, I have been falling back in love with one of my old faithful cheats:  ROTISSERIE CHICKEN!
