Colorful roasted vegetables are always welcome on my table.  Especially during the holidays!  These roasted carrots are beyond delicious!  We ate a lot of superbly awesome things on Thanksgiving… but when the roasted vegetable is hogging all of the “What’s the recipe?” side-dish hype, you know its a winner. These roasted carrots are easy to make and topped with an addicting maple dijon glaze!  Perfect for a the holidays…. and a weeknight! Summer Salads and Sides: Grilled Carrots and Green Onions with Lemony Tahini Sauce

Playing around with grilled veggies, have resulted in some of my personal fave meals of the summer.  But its hard to get some male members of our species – the hubs included – super stoked about grilled veggies.  Anytime I’m making space for them on the grill: eye-rolls.  Chock it up as another one of my “wild hippy-dippy ideas.” But sometimes “wild” turns out amazing.  I love roasted carrots and green onions. Love People Well: Spicy Asian Quick Pickled Veggies or “Quickles”

While I admit that I gravitate towards baked goods, specifically muffins, as evidenced by the first two posts in the Love People Well series (found: here and here), I am spreading my wings and branching out!  Pull your mason jars!  We are making “quickles!!”  The easiest, tastiest, crunchiest spicy Asian-style quick pickled veggies!
