Summer Salads and Sides: Sesame Soy Ahi Salad

Sometimes, I get a food itch that I just can’t quit.  This summer ahi tuna has been one of those. Partially because it takes about 12 seconds to prepare, but mostly because it tastes fresh, amazing and makes me feel like I could be on a tropical island. And to be honest, in exactly 9 days, I will be!  Kauai to be exact.  I plan to eat ahi poke by the bucket, hit-up fish markets like its cool, and order “catch of the day” on the daily.  So I’m giving myself a mini head start this summer. In this case, a sweet-tangy-soy-glazed head start…  Ending with “Mmmmmms” and lots of…

Summer Sides and Salads: Chimichurri Peach and Avocado Salad

You guys, its stone fruit season, which means PEACHES, PEACHES, and more PEACHES!  This salad takes advantage of all of the summer flavors: fresh cilantro and lemon juice, spicy peppers, creamy avocados, sweet peaches, and crunchy cucumbers! If you have had the oregano heavy chimichurri with meat (usually steak), this is its fresher lighter cousin. I’m opting for cilantro instead of oregano, tons of spices, and a little heat from a serrano pepper!  I can’t even explain the magical burst of summer this sauce and salad evoke on my tastebuds.  Can’t even. I will be very sad to see stone fruit season come to and end.  And nine out of…

Ultimate Black Bean Sliders

Ok, these are now possibly one of my favorite recipes on the site! Words just can’t explain how good these are!!!!   I don’t know why I’m even typing when I should be making more!  These Black Bean slider patties are. That. Good. In full disclosure, I don’t throw around terms like “the best” and “ultimate” lightly.  No, sir.  I treat those labels with the respect they deserve.  But, these are the “your search for the best black bean burger ends here” kind of thing. Also, if you have not tried black bean burgers/sliders.  Once you try them, you will realize how much you were missing out on – regardless…

Southwestern Chipotle Sweet Potato Noodle Salad

If the 80s there were acid wash jeans, leg warmers, and shoulder pads.  The 90s had hair crimpers, frosted tips, and breadmakers.  And today, we have……the spiralizer. Well, who knows what we will look back on and say “What were we thinking about?,” but I am betting that spiralized vegetable noodles and the spiralizers that create them will at least be on the list as diets become increasingly health conscience.  My attitude with friends as with vegetables is the same:  “The more the merrier.”  Its certainly not a bad thing, so I am not ready to lump them in the same category as hammer pants and boy bands. And also,…

Mango Avocado Salsa

On a spiciness scale of plain yogurt to ghost peppers, my preference lands somewhere just above plain yogurt.  While every other kid was busy dumping ketchup on everything in sight, I thought ketchup was too spicy.  Instead, I stuck to my Nonna’s homemade bleu cheese dip.  I was a weird foodie kid from the get go. My husband keeps waiting for more of my tastebuds to die so that we can finally add an additional star to our Thai food order.  “Just wait until you get older,” he says.  So far, no such luck.  Sorry.  But Salsa…I love salsa.  Maybe just not spicy salsa. So this Mango Avocado Salsa, may…
