Grilled or Baked Chicken Wings

Chicken is fast, cheap, easy, and enjoyed by pretty much all omnivorous humans.  Right?  There are so many chicken variations that it will make your head spin.  Every culture has put their own stamp on a signature chicken dish.  Every home cook has their go-to never-fail chicken recipe.  Its so versatile and small enough in size to be a diet staple.  But truly, when was the last time you ate a chicken dish that was out of the ordinary?  In all honestly, I can think of one lemon mediterranean chicken dish a couple years back that I had some bites of off my sister’s plate.  That was outstanding.  But in…

Swiss Chard and Kale Au Gratin

I frequently profess my love for chard.  Swiss, red, green, rainbow.  It doesn’t matter.  I love it all, but tend to buy the swiss/red varieties most frequently due to the deeper flavor and their higher concentrations of vitamins!  In the summers, I sometimes have too much chard (and kale, too)!  There are only so many green smoothies and salads one household can consume…So, sometimes I make this!  Swiss Chard and Kale Au Gratin! I love chard’s versatility.  It can be chopped up and thrown into salads raw, sautéed with a little olive oil, garlic, and s&p as a an awesome 3 minute side dish.  But, this dish proves that chard…

Key Lime Pie

This summer I am learning to embrace the heat.  Typically, I find anything over 80 degrees to be too hot.  But the ability to meet a friend for a morning run, do yoga outside, head to the beach, or go hiking and camping without any regard to the weather report is my definition of summer-time freedom.  So, my typical heat-induced coma has has me singing a different tune this summer – probably because our hottest day thus far has only been mid-80s.  Watch! When it hits over 90, I will undoubtedly be singing a very different tune. There are a few quintessential summer desserts.  Strawberry shortcake, blackberry pie, peach cobbler,…

Vegetarian Tamales

In the summer, I am certain that if we could explore during the day, cook our meals over a campfire at night, sleep in a tree-slung hammock (without getting eaten alive by mosquitos), and figure out a way to rig up a hot shower, I would give that life some consideration.  Hey, here in Seattle where the rest of the year is perpetually gray and we are coming off of the wettest winter in over half of a century, we take our summer sun very seriously!!  Its gone before we know it! Until we trade in our city dweller lifestyle, we will dream about our some-day cabin where we can…

Swiss Chard, Kale, and Farro Salad

Swiss chard is my favorite vegetable and one of my favorite foods.  It has been for years.  I recall being in a college-aged women’s group at church where the “get to know you” activity was to state your name and favorite food.  When I said swiss chard, the response to my answer was “Is that a soup?”  Someone else chimed in, “No, I think its a cheese.”  I may have looked dumb founded, but I soon after decided the group was not for me – although not because of their lack of swiss chard awareness.  I won’t hold it against them. Unlike collard greens and beet greens that need a…
