Simple Baked Black Cod

Ok, lesson time. If you are familiar with the buttery deliciousness of black cod (aka, sablefish or, rarely and sometimes falsely, wild alaskan cod), you can skip on ahead.  For the rest of you, if you are thinking that a deep fried beer batter and a side of fries are where you last partook, think again!  True cod or Rock Cod are the “fish and chips” fish.  It would be down right sacrilegious to batter and fry up black cod.  This fish is a delicacy.  An expensive delicacy, but still a delicacy! I try to keep things pretty affordable and easy to scale up for large groups around here…. but…

Kung Pao Roasted Chickpeas

If I am being honest, at times, eating healthy and the meal planning associated with it feels like too much.  It would be a whole lot easier to just forget about it, order take out, warm something up, or eat eggs for dinner.  Not that there is anything wrong with any of those things – in moderation, of course.  If I don’t take the time to plan, I default to cycling through the same few healthy meal items on repeat.  And, believe it or not, its hard to get people stoked about zucchini noodle pasta for the 3rd time this month. I call it the dinner-time rut!  I find it…

Apricot Raisin Oatmeal Cookies

Its summer!!!   If you live in the PNW or are lucky enough to pass through in the summer, then you know that it truly is breathtaking.  I may be a bit biased but come on, you guys.  The proximity to both the ocean and the mountains makes makes for some spectacular scenery no matter where you look. Here in the PNW, that means hiking, backpacking, and camping!  So far, we have soaked in as much beach, mountains, and rainforest as our schedules allowed.  LOVE summer time in the PNW! As rejuvenating as a weekend hiking can be, it can also leave your body feeling pretty fatigued.  So when it…

The Best Turkey Green Chili

For me, on rare occasions, I will make something that just tastes like it belongs.  It feels like home.  I don’t mean the home I grew up in or even food from my background.  I mean that it is a dish that I know will be made over and over again for many many years to come.  It will be a staple in our family’s repertoire; the meal we gather around for game nights, make for parties, and crave after we have been away.  Its not something fancy, but might as well be fillet mignon.  Do you have a dish like that?  Your “home” dish? I do.  It’s this Green…

Skillet Cornbread

Cornbread is one of those comfort foods that never falls out of style or out of season.  Its the Levi’s jeans of side dishes.  It’s equally acceptable alongside a pile of barbecued ribs in the summer and a bowl of chili after the weather has begun to turn.  Like a biscuit, its even acceptable at breakfast!  This was just as true 20 years ago as it is today. I’ll admit I love cornbread.  I build entire meals around it!  Where do you stand?  Love it, hate it, or somewhere in the middle?  I don’t know that I have ever met someone who truly hated cornbread, but I have met many…
