Chocolate Chip Shortbread Cookies

Politics and food blogging are two things that probably should NOT go together.  For my personal preference and sanity, I intend to keep it that way.  But this election folks…. Regardless of which side of the aisle you found yourself…It has brought out the ugly in people!  Even the most mild mannered people in my life have shocked me with their opinions, fears, and conclusions.  Yes, the political tides may be changing, but my level headed friends can’t go a-changing with them! So, if you have concerns are worries or even just want unity pray for our country!  We won’t all ever agree, but riots damaging property are counter productive.…

5-Minute No-Knead Bread

Fall and winter are when we turn to soups, chills, and bowls of all kinds of filling delicious warmth.  And come on ya’ll, what goes better with a big ol’ bowl o’ soup than fresh bread?!    The correct answer here is “nothing.” I have been known to throw together some cornbread with chili or stop at the store for a baguette on the way home… But, plan ahead enough to bake my own bread?  Um… no. For a long time, I thought there were only two categories of homemade bread.  The kind that takes FOREVER, requires extensive kneading, rising, and kneading again and then never quite cooks right in normal,…

Lemon Ricotta Pancakes with Blackberry Syrup

Why hello there, gorgeous, fluffy stack of pancakes!  You look so pretty in your blackberry syrup – all dressed up and ready for a delicious weekend brunch. In the land of pancakes, ricotta pancakes are my number 1 faves!!  (Followed by sourdough pancakes, if you were curious.)  Ricotta pancakes are light, fluffy and have that slightly cheese-cakey taste and texture.  Plus, anything flavored with lemon zest is automatically awarded a few extra bonus points my by tastebuds. Because, I am italian, and Italians love our ricotta.  I make these just about any time I have left over ricotta cheese.  And, ricotta is sold in quite possibly the most awkward quantities…

Coconut Milk Curry Noodle Soup

Due to a combination of the holidays, travel, and laziness, I have not been drinking nearly as many green smoothies, eating as many apples, or eating as many veggie heavy dinners.  And I can tell!  Not because my clothes feel tight, but when I take a marked deviation from the way I am used to eating, my body says, “Hey, lady! What’s with this?!”   Because you guys, I have been tired, and craving all kinds of bad for me things – probably because my body is nutritionally deprived from when I visited my friend and we chowed down to things like “Man Fries” (French Fries topped with all sorts…

Wild Rice and Mushroom Risotto Stuffed Pumpkin

I don’t watch TV other than the news… So I’m often out of the loop when it comes to TV references – unless they are from the 90’s, then I’m all over it.  A friend recently explained the “put a bird on it” reference from Portlandia.  If you are familiar with the skit, you probably are having a little chuckle about hipsters right now.  But, if you are like me, you are looking up the video clip on YouTube – which is what I did.  In fact, here’s the link. Now that everyone is up to speed… If putting the image of a bird on an otherwise boring or  typical…
