Eggplant Parmesan with simple Fresh Tomato Sauce

Eggplant parmesan is one of my all time favorite dishes.  My family is from italy.  More specifically, the town of Termini on the island of Sicilly.  In Sicilly if you aren’t eating the catch of the day, red sauce is king and eggplant parmesan is on an equal playing field with lasagna.  So what I am about to say, may make my great grandmother roll over in her graves.  But at the risk of being ostracized by the rest of them for life, I am here to say that not all good red sauces need to take all day!  Trust me, I can appreciate and savor some long simmered sauces…

Simple Baked Black Cod

Ok, lesson time. If you are familiar with the buttery deliciousness of black cod (aka, sablefish or, rarely and sometimes falsely, wild alaskan cod), you can skip on ahead.  For the rest of you, if you are thinking that a deep fried beer batter and a side of fries are where you last partook, think again!  True cod or Rock Cod are the “fish and chips” fish.  It would be down right sacrilegious to batter and fry up black cod.  This fish is a delicacy.  An expensive delicacy, but still a delicacy!
