What to Make for Easter – DESSERT Edition: Lemon Silk Pie with Carrot Cake Oatmeal Cookie Crust

Easter dessert doesn’t have to mean carrot cake, although carrot cake is delicious….  If your Easter meal is filled with traditional fare like ham, lamb, and scalloped potatoes, then a big heavy piece of cake probably doesn’t sound too appealing.  So how about a slice of light and fluffy lemon silk pie?  The zing of lemon gives this spin on silk pie a refreshing twist.  And that crust??  I knew I wanted to infuse some of the classic carrot cake flavors into a sturdy crust that contrasts nicely with the tang of a lemon filling.  This crust is part oatmeal cookie and part crust.  But not just any oatmeal cookie……

How to: The Non-Pastel Easter Table-scape

When this posts, Easter will officially be 1 week away!  While I am an Easter brunch girl alllll they way, I am not a big fan of the decor.  Randomly places eggs?  Pastel colors?  Bunny rabbit figurines? In my dream kitchen, the island is a french pastry table – one that has turned wooden legs with chipping paint.  The rest of my dream kitchen would of course be equally dreamy but this island is the literal central piece that ties it all together. In this dream kitchen of course, I will churn…

What to make for Easter – BRUNCH Edition: Carrot Cake Zucchini Bread with Cream Cheese Icing

I am a brunch girl.  When I think about my “desert island” foods, they are all brunch items.  My family’s Easter brunch is right up my dream-food alley.   Hello, coffee cake, fresh fruit, cinnamon rolls, and creamy potatoes.   But, when I think of Easter desserts, only one thing comes to mind.  Carrot Cake.  I love carrot cake, but carrot cake at brunch isn’t really a thing.  Its probably the only food I feel bummed to miss by celebrating Easter over brunch. So, I wanted to find a way to incorporate carrot cake into a brunch-friendly treat.  The result?  Carrot Cake Zucchini Bread with Cream Cheese Icing! Quick breads…
