Fall Flavors: Pumpkin Butter

Last week, I swooooooned over this apple butter!  And it is seriously swoon worthy.  But, on the off chance that you don’t have 3-4 hours, I wanted to provide this 20-minute, equally smooth pumpkin butter recipe for all my fellow fall flavor loving people! I would be remiss if I said the flavors were as intense as the slow simmered then baked apple butter from last week, but this 20 minute pumpkin butter is still packed with fall spices and naturally sweetened with coconut sugar, brown sugar, and maple syrup.  All fall long, I keep jars of this stuff for last minute brunch or coffee dates with friends. Pumpkin butter…

Meet Ruby

You guys, I have been holding out on you with some fun news…. Remember when I mentioned being in Alaska last month?  Well, this is little lady is the reason.  Meet Ruby! Ruby is a 2.5 year old Alaskan Husky, and the newest member of our crazy family.  Ruby was a racing sled dog in Alaska.  One month ago, she lived in a dog yard with 18+ other dogs.  Unless out training, she spent most of her day tied to a chain or in her dog house.  Ruby had never been indoors, let alone slept on a cushy dog bed atop meticulously stashed dog toys in our bedroom. The husband…

Healthy Treats – Salted Caramel Chocolate Coconut and Oat Bars

If you cringe when asked to be “treat mom” or to “bring the treats,” I know the feeling, even though I am currently kidless.  Almost everyone if off of something these days. Even kids! The school’s list of acceptable/unacceptable ingredients in homemade treats I see pinned to the fridge at my friends’ house leaves little but organic unicorn dust and non-GMO rainbows up for grabs.  And unfortunately, I’m fresh out of both. One year we hosted a monthly dinner for our church small group.  A week before our first meal, three people reached out about their dietary restrictions with the clear assumption that accommodations would be made.  Between the 3 of…

Fall Flavors: The Best Ever Apple Butter

You know those lazy sunday afternoons where the weather is hinting at fall you want to do is curl up with a cup of tea and a book (or the 2 months of Bon Appetite magazine you haven’t had time for)?  I am ready for those days.  This summer has been amazing.  One of my favorite summers ever actually!  But, as the days get cooler and a few of the leaves are starting to turn, so I’m ready for that pot of tea, a good book, and a cozy blanket.  The only thing that could make this picture even better is if there was something cooking to make my house…

Fall Flavors: Smoked Salmon Succotash

Fall is officially here… And so is all of the amazing fall produce!!!  Is anyone else in HEAVEN at the farmer’s market right now??  The greens!  The apples!  The brussels sprouts!  The potatoes!  The last of the zucchini!  The beginning of the fall squash!  I mean, WHOA!! I have the brownest brown thumb around and am in complete awe of what they grow!  They should be so proud!  The season’s abundance is seriously striking!  Instead of pride, I see tired eyes and muscles – the wear of the season’s work beginning to show.  Since I can hardly keep succulents alive, I can’t fathom the workload! This post is the first…
