One-Bowl-Wonder: Gnocchi with Artichoke Hearts

When I want something fast, easy, and crowd-pleasing, I will be making this gnocchi with artichoke hearts 9 times out o 10. Especially in the summer. Normally, pasta seems like a heavy choice for warmer months, but the acidity from lemon and the marinated artichoke hearts makes this a bright zesty summer favorite!
When something this delicious and flavorful can be made in 15 minutes and with one pot, it gets an A+. If I have no time or unexpected guests, this is a summer time go to. Pop the cork on a chilled bottle of pinot gris and spend the night doing something other than cooking!
Ya’ll, my mouth is watering. I have a serious crush on anything with artichoke hearts in it. And tender little gnocchi dumplings, a light bright sauce, and some parmesan shreds make this a mouthwatering combo!!
Easy to prep ingredients. One bowl. Big flavors. 15 minutes. Yaaaaasssss!
- 16-17oz. package of store bought gnocchi
- 2 tbsp. olive oil
- 8-10 marinated artichoke heart pieces (from store bought jar)
- 1 tbsp. liquid from artichoke jar
- 1 clove garlic, minced
- 1/2 cup shredded parmesan cheese
- juice from 1/2 lemon
- zest from 1/2 lemon
- salt and pepper to taste
- pinch of crushed red pepper flakes
- a few chopped parsley leaves
Boil gnocchi per package directions. Drain water and add 1 tbsp. drizzle olive oil and minced garlic to the pan and toss with gnocchi over medium heat. Add artichoke hearts, liquid from artichoke jar, and pinch of red pepper. Cook for 2 minutes, tossing occasionally. Then taste and season with salt and pepper and add lemon zest and parmesan. Toss to combine and garnish with chopped parsley leaves.
