Summer Sides and Salads: Garlic and Ginger Chicken Udon Noodle Salad

I know that I have said this before but summer is not the time of year when I want my oven cranked up… Aside from the heat factor, its also the TIME!  So, I have been falling back in love with one of my old faithful cheats:  ROTISSERIE CHICKEN! Yes, its a bit more expensive, but for a ready to eat deli item, its still not bad.  For a smaller sized chicken, I can usually get at least 2 dinners plus a 2-3 of the husbands’ sandwiches for lunch.  The man LOVES his daily sammich and apparently hates lunch time variety.  He claims that minimizing variables is what geniuses do.…

Summer Road Trippin’: Honey Sriracha Roasted Chickpeas

Our household is a few camping and mini-road trips into the summer weekend adventure season!  We have had some super fun ones and even more that I can hardly wait for!  So car snacks are absolutely a happening thing for this easily hangry traveler.  Hangry Maria is not someone you want as a travel buddy.  Just ask the husband. I had been dying to test out a bunch of roasted chickpea flavor ideas I’ve had floating around in my head.  So before our weekend trip a couple weeks ago, I made a small batch of each.  The two clear favorites were the honey sriracha version in this post and the…

Father’s Day and Hashbrowns

I was probably 16 or 17 before we ever actually celebrated father’s day.  Not because I didn’t have a father.  I do!  A great one! What to Make for Father’s Day: Flank Steak Korean-Style

I rarely take issue with the timing of a holiday but I have to say… Father’s Day probably is one of the worst. Graduations.  End of school.  Class parties. Beginning of summer.  Too. Much. Happening.. From what Google says, the first Father’s Day occurred in 1910 after a woman was inspired to honor her father during a Mothers day church sermon the year prior.  Ironically, some form of Mother’s day has been celebrated since Greek and Roman times!  How do you think dad feels about that?   Mother’s day is pretty uneventfully placed in the middle of May.  On paper, it sounds logical to place father’s day a month later.  I’m sure…
